WHere is a simplified version of a beverage from a new menu. It's a party-sized premix that's packed with essence associated with Christmas time, rendering it excellent for a celebration. Reserve the remaining citrus syrup you can use for morning drinks, sweets, or to make another batch of this cocktail.
Bikini Recipe
Makes enough for 10 guests
For the Citrus Syrup (yields 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Premix (produces 850ml, serving 10)
400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Cordial: Combine every components in a pot, heat until it reaches a light boil, stirring to dissolve. Next, turn off the stove and leave to cool completely. Transfer to a sterilised bottle, cap it and store in the refrigerator, it will last for around one month.
Preparing the Premix: Mix the specified liquid ingredients into a big jug, let it rest for one hour, then strain , ideally through cheesecloth, so it's fully clarified.
For serving: Measure 85ml of the cocktail base into a cocktail shaker containing ice, and stir gently for a minute to cool it down. Pour into a cold coupe glass or equivalent, garnish with the cranberries adding the final touch using a brief mist with the mandarin essence above the glass.
